ECOLOGY SAUVIGNON BLANC

Maiden harvest 2007.

The 13 ha of Sauvignon Blanc vineyards are situated on the coolest slopes of the farm. They are carefully laid out to match the quality and structure of the soil. We don't want our Sauvignon Blanc to grow too vigorously as to keep the quality and have therefore planted these vines on marginal (poor) soil.

The greatest challenge of planting Sauvignon Blanc is finding a suitable cool area. At Paardenkloof Estate we are very fortunate that every afternoon, at the hottest time of the day, the wind comes in from the lagoon and cools down the rows of Sauvignon Blanc.

Our vines carry few grapes and a lot is cut back in January so that all the strength goes into the wine. As with the Shiraz, all imperfect bunches are removed, as are the grapes that have not yet reached the same level of ripiness, to ensure all even bunches to obtain the best possible quality.
